About
This interactive course includes a two-week intensive and comparative on-site study of integrated broiler production in Central Mexico. Students will be exposed to topics such as rearing and husbandry, housing and equipment, nutrition, flock health, processing, further processing, and retail products both here in the USA and in Mexico. Additionally, students will be exposed to the different cultures of Mexico, and learn about the history, cuisine, landscapes, and way of life while visiting the cities of San Miguel de Allende, one of the most touristic colonial-style cities in central Mexico and one of the preferred American retirement places with an estimated American population of 35,000. Guanajuato, a UNESCO world heritage site, is a beautiful 1500’s mining town surrounded by mountains and the perfect place to learn about European heritage to Mexican culture. Finally, the city of Queretaro has become a significant economic engine in Mexico. It is also the home of JBS Pilgrim’s Mexico headquarters. At the completion of the course, each student will be able to summarize the fundamental basis of Mexican broiler production from the hatchery through the processing plant, describe differences between Mexican and USA-based production systems, and understand how cultural differences affect production systems and retail poultry food product choices.
